Guacamole Stuffed Jack-O-Lanterns

Step 1

Carve bell pepper jack-o-lanterns with your favorite design. Remove top and scoop out seeds. Set aside.

Step 2

Halve avocados and remove seeds. Scoop into a bowl. Add lime juice, shallot and sea salt. Mash together with the back of a fork. Add the chopped bell pepper and mango, mash together again. Season to taste with sea salt. Spoon the mixture into pre-carved bell pepper jack-o-lanterns.

Serve with blue corn chips.

  • 3 ripe avocados
  • 1 tsp lime juice
  • 1 shallot or red onion, finely crushed
  • ½ chopped orange bell pepper
  • ½ ripe mango, diced
  • Sea salt to taste
  • 2 whole orange bell pepper for jack-o-lanterns
  • 1 bag blue corn chips for serving
