Avocado Snowball Truffles
1½ cups semi-sweet chocolate chips
1 tsp vanilla extract
pinch of sea salt
½ cup shredded coconut
To finish: 1/2 cup semi-sweet chocolate chips
Place peeled, pitted avocado in a food processor and pulse until the avocado is completely smooth. Set aside.
Melt the chocolate chips in a microwave safe bowl at 50% power for 30 seconds, stir until completely melted and smooth.
Stir in the avocado, vanilla extract, and salt. Mix until completely combined then refrigerate for 2 hours or overnight.
When the mixture is chilled, melt ½ cup of chocolate chips to create a dip. Use a tablespoon to scoop and then roll into round truffles, dip each truffle into melted chocolate and immediately roll the truffles in the coconut. Store truffles in an airtight container in the refrigerator up to two weeks.
